If you have a microwave oven with Steam function, the lentils and sugarsnap peas can be cooked on that function. Lentils + water are placed in the bottom part of steamer accessory, covered with the lid and cooked on Steam/Boil function the time recommended for the lentils. Sugarsnap peas can be cooked in a similar way: Place them in the steam grid and pour water in the bottom container. Cover with lid and steam for 2-3 minutes on Steam function.

Lentil, sugar snap pea and feta salad

Ingredients (for 4 people)

Serves 4 200g Puy lentils 250g cherry tomatoes 1tbsp balsamic vinegar 1 red onion, finely chopped 200g sugarsnap peas 150g feta cheese small bunch mint leaves, torn Dressing: 2 1/2 tbsp balsamic vinegar 5 tbsp olive oil
Preparation

Preheat the oven to 200°C. Cook the lentils according to packet instructions, until tender. Drain and place in a serving dish. Meanwhile, put the tomatoes in a roasting tin and drizzle with the balsamic vinegar and a little olive oil. Roast in the oven for 20-25 minutes. Steam the sugarsnap peas for 3-4 minutes, then refresh in cold water. Add to the lentils, along with the red onion and mint leaves. To make the dressing, shake the ingredients together and season. Pour over the lentils and toss. Arrange the tomatoes on top and crumble over the feta.
