The beetroots can be placed in the bottom part of the steamer, water filled up to half of the height of the beets and the dish covered with lid. Cook on Steam/boil for 20-25 minutes. (If consumer has an oven with Steam function)

Grilled mackerel with beetroot & horseradish salad

Ingredients (for 4 people)

Serves 4 4 mackerel fillets 6 medium beetroot or 12 baby, scrubbed 2 oranges, segmented 75g salad leaves, such as rocket, watercress, red chard 1 sliced red onion juice 1 lime dressing: 1/2 tbsp red wine vinegar 2 tsp horseradish sauce 3 tbsp olive oil
Preparation

Steam the beetroots whole until tender, about 45 minutes. Cool, then peel away the skins. Cut into chunks and place in a salad bowl along with the leaves and orange segments. Meanwhile, put the red onion in a small bowl with the lime juice and let sit for 30 minutes. Then add to the salad. Grill the mackerel fillets under a preheated grill, skin side up, for about 5 minutes or until cooked. To make the dressing, mix together all the ingredients, season and pour over the salad. Toss well. Serve with the mackerel.
