American Blueberry pancakes with maple syrup

Ingredients (for 4 people)

Serves 10 200g plain flour pinch salt 2 tsp baking powder 2 tbsp caster sugar 2 large eggs, lightly beaten 250ml buttermilk 100ml milk 25g butter, melted 200g blueberries maple syrup
Preparation

Stir together the flour, salt, baking powder and sugar. Whisk in the eggs, buttermilk, milk and butter to make a batter. Don¿t over whisk. Heat a frying pan and pour a ladle of the batter onto the pan. Sprinkle over a few blueberries. When bubbles appear on the surface, after 1-2 minutes, turn the pancake over and cook for a minute on the other side. Remove and keep warm. Repeat this with the rest of the batter, then serve the pancakes with lots of maple syrup.
