  Thai beef salad
Cooking Time : 10 minutes
Preparation : 15 minutes

Ingredients (for 4 people)

Serves 4
2 sirloin steaks oil for brushing 4 shallots, thinly sliced bunch spring onions, chopped 150g beansprouts 200g mangetouts (blanched and refreshed)or peas 1/2 Chinese cabbage, shredded 4tbsp chopped mint 4tbsp chopped coriander Dressing: 3cm piece ginger, peeled and grated 2-3 red chillies, de-seeded and finely chopped 4 tbsp Thai fish sauce 4 tbsp lime juice 2 1/2 tbsp soft brown sugar


Preparation

Brush the steaks lightly with oil. Cook on a griddle for about 8 minutes, for medium rare, turning once. Let rest for 10 minutes, then trim away any fat. Cut the mange tout into thin strips. To make the dressing, mix together all the ingredients. Put the remaining ingredients in a large shallow serving dish. Thinly slice the beef and add to the dish along with the herbs. Pour over the dressing, and toss. Allow to sit 5 minutes before serving.
